The anticipation is multiplying for connoisseurs of the sights, sounds and smells which has become synonymous with Trefzger’s Bakery. Speak with businesses in Peoria Heights and many are drawing attention to the outside transformation of the old Rouse-Hazard bicycle factory. Even the citizenry are asking questions. There is an infectious excitement being experienced in Peoria Heights.

Jeff and Martha Huebner, owners of Trefzger’s, are coming to Peoria Heights to make their own history. Because of my own sense of curiosity, I asked Jeff and Martha if we could sit and have a conversation about their “historic” move.

My initial question was, “Why the Rouse-Hazard Building?” Both were quick to respond, “It was the right fit for our business, being it’s over 150 years old.” In the midst of construction mania, the Huebners still exuded a sense of “home” when discussing the building.  According to Jeff, the “size and shape of the building were exactly what Trefzger’s required to build on their own history.” The very façade of the new building will be similar to their present location and the prior location on Main Street. Consequently, present and new customers will be able to identify with the new location.

When asked what their plans are for the new facility, both Jeff and Martha were excited to discuss those new experiences that are going to add to the multi-sensory experience of going to Trefzger’s. One addition will be an observation area where one may watch the cake masters “strut their stuff.” Another addition will be seating for approximately 20-30, with 10-12 being able to sit at a table that was formerly used for production. No longer will there be those times when “special sweets” will have to be eaten in transit, due to one’s inability to wait. The Huebners are very aware of the historical significance of Rouse-Hazard and thus, will be incorporating two Sylph bicycles, milk cans and bottles, memorabilia from both Hiram Walker and Pabst and antique cake decorating instruments which could very well have come from Grandma’s kitchen. As we spoke, I could imagine those potentially tear-filled moments resulting from seeing baking instruments just like Grandma’s.

On a practical note, the new facility will have 1,200 square feet of storefront, whereas the present location has 200 square feet. The second floor will be able to host 200-250 people and is illuminated by multiple 8-foot windows.

My final question was asked to gain a sense of the Huebner’s future plans. Both agreed that their goal is to continue the same quality which one experiences at Trefzger’s. The second plan is to maintain the history of Trefzger’s, therefore adding to its longevity.
